Simple RAW Vegan Sushi Recipe


I've always been obsessed with sushi! I honestly feel like I'm constantly craving it. I'm not sure whether it's the salty soy sauce or possibly the avocado and rice combo that just satisfies me so completely, all I know is that I could happily eat it for dinner everynight. 

I've recently been expierementing with going "raw vegan", where you don't consume any cooked foods (very recent decision) just to see how it effects my digestion. I had a mini panic attack when I realised this would mean that I wouldn't be able to eat my much loved sushi all the time :(

Buutttttttt I came up with the perfect - no rice addition - to sushi! So I can continue with addiction. 

It's pretty much just how you would make normal home made sushi just minus the cooked rice and supplement it with "sushi" cauliflower rice!

This recipe is perfect for anyone who is trying to aviod rice or even trying a raw vegan diet or maybe you just wanting to give raw sushi a crack! It definitley cures all sushi cravings in a very healthy and nutritious way. 

Cauliflower "Sushi" Rice Ingredients (makes 3 big rolls depending on how much cauli rice you use): 

  • Half a head of cauliflower
  • 3 tablespoons of sushi seasoning or apple cider vinegar (for a healthier option)
  • 3 tablespoons of nutritional yeast 
  • Salt and Pepper to taste

Cauliflower Sushi Method:

  1. Cut the core or "curd" off the cauliflower and cut up the heads into rough pieces
  2. Put the cauliflower into a food processor or high speed blender
  3. Add vinegar, yeast and salt 
  4. Blend until combined and the cauliflower resembles "rice" - try not to blend too much or it'll become too wet for the nori! 

Note: If you want to add any flavours into the rice you can do so but this combo makes it super similar to sushi rice!

And that's it! Super simple, easy and healthy. 

You can now go ahead and roll your sushi with whatever ingredients you desire. 


I made mine with my home made Raw Cashew "Cheese", avo, carrot, cucumber, spinach, alfa alfa, onion and of course rolled it with nori!
